KEDGE: Three alumni behind the "Halles de Bacalan" and six other covered markets.

Gourmet markets all throughout France based around friendliness and quality to revitalise city centres.

Biltoki, is the story of three brothers (Bixente, Romain and Xabi Alaman) and their cousin (Jérôme Lesparre) Kedge Business School alumni, who decided to unite forces to launch a new venture in covered markets!

A family business that made its debut in 2009 with creative and collaborative real estate projects in the Basque Country. Today, it’s a team of connoisseurs who have visited most of the Markets in Europe and who have given themselves the task of creating and animating their future communities.

Biltoki meets the needs of urban populations, town halls, and craftsmen by breathing new life in covered markets.

“We did not invent anything, but we offer modern halls with authentic values! Our leitmotif: welcoming and quality, both in the markets and in the heart of the company. Each one is conceived in a clean way to respect its individuality: there is no duplicable model at home! Each project is a new adventure every time,” they told us.

Today, there are already 5 markets and every day many visitors are welcomed. Two more markets will soon see light of the day:

Recently, and more precisely, last 07 December, the Talence market (with 16 stands monitored by craftsmen, traders, and producers selected for their know-how and synergy) has recently opened to the great delight of the people of Talence.
